Green Curry Paste

Actual recipe from Hamamama.

2 onions (medium)
1 whole garlic
1 handful basil (Hamamama's version uses same amount of marjoram)
5 kaffir lime leaves
1 handful coriander
1 stalk coriander root
3 green bird's eye chillies
1 large stalk lemongrass (or 3 medium)
1 handful mint
1 1/2 tbs. oil to fry

This basic green curry paste can be used on a variety of meats, the best being beef. You'll want to fry the curry paste till fragrant, add the meat, and throw on enough coconut milk to cover before simmering it for a bit. Serve with rice.
